Mustard oil or sarson ka tel (सरसों का तेल) is known for its signature pungency. A staple in most Indian kitchens, mustard oil is a big part of Bengali and Kashmiri cuisine. We picked 6 commonly available kachhi ghani (cold-pressed) mustard oil brands.


Kachi ghani refers to the 'cold press' extraction process for taking out oil from seeds. For extracting mustard oil, mustard seeds are crushed at low temperature so that the natural properties, antioxidants and essential oils are retained in the oil.

The first difference between these two types of oil lies in their production process. The normal mustard oil extraction process involves the usage of machinery and chemicals. On the other hand, Kachi Ghani Mustard oil is wood pressed mustard oil extracted at room temperature below 50 degrees centigrade.

If the mustard oil is pure there will be no change in composition or colour. But, if the oil is adulterated there will be change in the colour of the acidic layer. From the rich golden colour, the addition of nitric acid can change the colour to orange-yellow-red depending on the amount of adulteration.


Mustard oil, derived from mustard seeds, is dark yellow and has a pungent odour. Mustard oil is widely used as cooking oil in major Indian households, as it has the benefits of not accumulating in the blood vessels. It contains healthy fats like omega 3 and 6 along with helping reduce cholesterol levels.



How to check the purity

Measure 5 ml mustard oil in a glass test tube. Next, add 5ml of Nitric acid to the test tube filled with oil and shake it gently. If the mustard oil is pure there will be no change in composition or colour. But, if the oil is adulterated there will be change in the colour of the acidic layer.



Take 2ml of oil in a bowl and add a spoon of yellow butter to it. If the colour of the oil doesn't change, then the it is pure and safe for consumption.


   My living experience

In my experience, 5 kg oil is extracted from 15 kg mustard seeds.  From 3 kg mustard you get 1 kg oil, its price is at least Rs 120-150 per litre.  In comparison, palm oil is much cheaper.  The same is adulterated.  99% of the oil available in the market is adulterated with palm oil.  How to check?  Deep freeze the vajar oil for 15 minutes.  Palm oil will solidify.  Mustard oil will not solidify.


It is a matter of simple understanding that no mustard oil miller does any publicity. You will take your jar, he will sell you oil for 150/-litre.  And other companies will give it to you in a packet.  Will also campaign.  Still, how do they offer it at low prices?  You will get Emami Kachchi Ghani oil at very low prices.  Try turning the packet upside down sometime.  Must have written.
